Title: Minnesota Cherry Muffins **

4tbButter or margarine
3/4cSugar
1/4tsSalt
2 Eggs; beaten
3/4cSour cream
1/2tsBaking soda
1 1/3cFlour
1cPitted cherries; fresh -OR- frozen

Cream together the butter, sugar and salt. Mix together the eggs and sour cream. Add to the butter mixture. Combine the baking soda and flour. Stir in cherries. Add dry mixture to butter and egg mixture. Stir only until dry ingredients are moistened. Spoon into lightly buttered muffin tins or muffin cups. Bake at 400~ for 20-22 minutes until golden, and when tested with toothpick, no batter clings. Serve warm from the oven with sweet butter.
